Jaew mak len – chunky.
Jaew mak len is one of the most popular dips in Laos. Made with charcoal-grilled tomatoes, chillies, shallots and garlic, this flavourful relish is a great way to spice up grilled meats, fish, steamed vegetables and rice. Traditionally it is often eaten with sai oua, a herb-rich pork sausage, and khai pen, fried Luang Prabang river weed. Serve in a small side bowl as a condiment.
Ingredients: tomatoes (68%), chillies (3%), shallots, garlic, coriander leaves, fermented fish sauce, fish sauce and salt.
